If you have physical access they you need to install a keylogger.. Many of them now show up in Anti virus scans so finding a new one or disabling AV for a ferw days does the job..
To do it remotely is a fair bit harder where you need to trojan her machine (burying the trojan into a filetype that will be executed with something like slipknot) then once remotely controlled install the keylogger.. To be honest this is non trivial if she has anti virus tools on the machine as you need tools that are not out in the public domain (as once they are they get added to the virus profiles)..
