Ive a friend who has left his luggage at a few airports including Bangkok... He has never mentioned any problems and if he had some he will more than likely moan about it for a while.....
personally if you have 7 hours after immigration and then checkin again i wouldnt bother.... Bangkok traffic is terriable.... Better of in the airport bar and have a couple of cold ones..... As its only a stopover where are you heading after..... If its Phuket or somewhere like that i would just wait until i got to where i was going....
