Just want to back Ramster's recommendation of Sandy Spring Hotel. It's fantastic - really well done rooms, spacious, spotlessly clean, very friendly and helpful staff, no problem at all about bringing guests back and it's nice and quiet even though it's close to all the action. They could charge a lot more and it would still be good value. And its well worth paying the little bit extra for a seaview room on the top floors - the view really is magnificent. It also has a nice, secluded sun terrace and a big swimming pool.
Only one tiny thing - although they do room service food, they don't have a sitdown restaurant or coffee shop. But it's no problem. Just turn right when you come out of the front doors, walk for 30 seconds and there's an English pub called The Sportsman that does great food. Try the toasted sandwiches. Or walk for 30 seconds to the left and cross the soi for an excellent bar owned by French people who do good Thai and top class French food. There's even a quiet little beer bar exactly next door to the hotel, with one or two sweethearts in it, if you can't be bothered to walk to the main action.
I can't wait to go back there!
Ramster, in answer to your Patong question, I'd recommend the Patong Pearl Resotel. Again, nice rooms, nice staff, no problems about guests and good location.
