There are so many bars, the best ones will always be a personal view.
Most are situated in Bangla Rd and the sois off this street.
Mai Thai Bar in Soi Eric, Hells Bells in Soi Seadragon and Love Bar in the Tiger complex are a good place to start. Also Shipwreck and U2 bars in Bangla are good.
