Just do a Google search for Priceline, Hong Kong. You have to regtister to bid, and once you bid and they accept, you've bought yourself a room. If you bid too low you can immediately rebid for a slightly higher price. I've gotten rooms through there on several occasions. They add a service fee and tax, but the five star hotels can usually be had for around $65 US per night, everything included, which is a lot cheaper than the usual price. You have do do your bidding in HK dollars, so be sure to look up the conversion rate.

Of course you can always find some smaller hotel that's even cheaper, if you're trying to save money. For example, the Majestic suites is decent, and the rooms there are around 1350 baht.
