You can work in your bar only if you jump through all the hoops for a WP and min wage etc.. The hassle is that there are 'issues' to do with VAT (many suppliers are outside the loop) and so then your declarations are low and under the min levels..
Of course you are allowed to sit in your bar and tell your staff what to do.. Thats managing your investment and accepted..
