Jungceylon would probably be the main shopping centre you would like. When I was there last time, it was closing at 21:00 but I think the plans are to have it close at 24:00. (Has this happened yet?)

Restaurants - you can have a meal at anytime really. Plenty of reasonable places on Soi Sansabai where you can have a feed up to 5am (eg. Pizza 1) or even later! But generally I think most restaurants on Beach Rd close around 22:00 to 23:00.

Someone will correct me if I'm wrong.

shopping centres

A few shopping centres not already mentioned:

Jungceylon - 10pm, Carrefour 11pm (i think)
Central Festival - at 10pm, although cinema is open later
Robinsons (Phuket Town) - 10pm
Lotus - supermarket 11pm, shopping mall part 9pm
Big C - supermarket 11pm, downstairs shops 9pm

not sure what time the 2 Oceans in Patong close, maybe around 11 or 12
