Hua Hin to Suratani, approx 7/8 hours, then need to catch bus another bus to Phuket, approx 4/5 hours. Make sure bus stops at Suratani, might sound stupid thing to put but they do not even tell a Thai the truth at the beginining of the journey so sure to also lie to Farang!!!

Done that trip. Strongly recommend you go to Bangkok and fly down.
In HuaHin they tell you it's a VIP bus to Phuket so you think it's a nonstop run all the way on a decent coach. They don't tell you about stopping at Surat Thani, the 1 hour wait and change to a normal old slow bus with "natural" aircon that stops all the time and takes another 4+ hours to Phuket City.
