Get 60 day tourist visa and get an incountry extension for 1900 baht thats good for 30 more days.. Total 90 days.
Or get a 'double entry' tourist visa and do a short visa run one day.

The part I could not figure out with the double entry visa is if I can leave and come back or if I am restricted to 2 entries only? Say I want to do a couple of weekend trips do Singapore, Vietnamn and Cambodja when I hold this typ of visa, would that be possible? The way it is written on the Thai embassy's Swedish website I figured it wasn't possible but that seems a bit strange to me.

Yes with a double entry visa you can only use each entry one time.. When you leave the country you expire that entry even if only used for a few days.. It is possible I hear to get a re-entry permit that saves the days but thats trips to Phuket town immigration, money and hassle.
However if your taking multiple trips away then whats the problem ?? Your allowed 30 days visa exempt each time you arrive up to a maximum of 90 days in 6 months.. So come, stay 30 days.. Visit cambo.. Come back for 30 days.. Visit Sing.. Come back for 30 days.. Theres you 3 months all done without any visa. If your worried you may stay a little longer mix in one tourist visa at any stage.

7 months is a lot tougher.. You will need to get tourist visa's and do more visa runs..
Perhaps your country has a 'friendly consul' that will issue a non imm O on the basis of visiting friends ??

Have been reading about this now and think I will get VOA and do visa runs the first 3 months and then apply for a tourist 90 days visa in Singapore. Can't come and go as I please but close enough.

If you have a new visa in your passport on arrival Thailand, would it be possible not to use it?
Say if you are going somewhere in less than 30 days. Can you then ask for a 30 day exemption stamp, and save the visa for later entry?

I am told it is.. You can enter on a visa exempt stamp and not use a tourist or other visa to preserve that entry. Never done it personally.
Tho a grumpy immigration official can make his own mind up on these issues.
